Meet J.R., our Master Butcher

J.R. runs the block — and he is a competition BBQ pitmaster as well as a master butcher. That combination is the useful part: he can break a primal down to your exact spec, then tell you how to cook it, what temperature to pull it at, and how long to let it rest.

If you are planning a brisket, he is the one to ask. And the rest of the crew behind the case will look after you just as well — there are no wrong questions at this counter.
